Eggplant Parmesan


One of my favorite vegetables is Eggplant, and the best way to cook eggplant, is Eggplant Parmesan.


Try this Eggplant Parmesan recipe:

 1 Large Eggplant
Breadcrumbs (seasoned)
1 Large Egg
Olive Oil

Tomato Sauce
Mozzarella cheese ( sliced or shredded)
Parmesan Cheese

Slice Eggplant lengthwise, not to thin, it will fall apart.

Beat Egg, Dip eggplant into egg, coat with breadcrumbs.

Fry Eggplant lightly in Olive oil. Place on paper towel to remove excess oil.

Coat bottom of baking dish with thin layer of sauce, layer fried eggplant ( I prefer 1 layer)

 Lightly coat Eggplant with sauce, add mozzarella sprinkle with parmesan cheese. Cover  with aluminum foil.

 Bake in oven at 425, for approximately 25 min or until cheese is bubbled and golden.

Remove from Oven, serve with fresh bread.
