Rainbow Pasta Salad


This pasta salad is a great make-ahead dish.  It's a yummy addition to any entrée and comes together in just a few minutes.  What's not to love?


For the Salad:
Pasta -  penne /fusilli /rotini
1 red pepper - chopped
1 yellow pepper - chopped
1 orange pepper - chopped
1/2 cup kalamata Olives
1 cup cherry tomatoes halved
1/2 cup Feta Cheese crumbled

For the dressing
3/4 cup olive oil
1/4 cup red wine vinegar,
1-3 cloves of garlic (minced)
1tsp sea salt
1/4 teaspoon black pepper.
1 Tbsp fresh basil, finely minced
1/2 tsp fresh oregano finely minced

Cook pasta according to package instructions. drain and let cool.
Chop peppers, mince garlic, half tomatoes and crumble feta.
Whisk together ingredients for dressing.
Combine pasta and chopped peppers, minced garlic, olives, and dressing in a large bowl,

Toss and serve
