Homemade Cheese Ravioli

With the cool weather we have been having lately, there is nothing I want more that a big bowl of pasta.


 Check out this homemade Ravioli recipe.

Dough:
2 Cups flour
2 Large eggs
1/4 Cup extra virgin olive oil
3 tbs water
1/2 tsp salt

Make a well with the flour and combine all ingredients.
Mix well with your hands
Add more water if it seems to dry ( drops at a time) or more flour if it seems to wet.
Turn with hands for approximately 2 minutes or until the dough is smooth.
Let stand under a bowl for 20-30 min.


Filling: ( create while dough is sitting)
1/2 cup Ricotta
1/4 cup Parmesan cheese
2 tsp grated onion (yellow)
3 egg yolks
1 1/2 tsp salt.

Combine all ingredients in a medium sized bowl, mix well.

Now the tricky part, assembling the ravioli. I remember helping my Nonna make them and she would use the good old pasta making machine to run the dough through. I however do not have that machine so will be rolling it out with a rolling pin.

Get the dough as this as possible, not to thin we don't want it to tear while filling or boiling

When the sheets are completed cut them into squares, fill with the filling, and fold in half and crimp all edges together tightly.


Place is boiling water for approximately 8 min .

Drain and serve with sauce.
