Trying to get my family to eat healthy and to try new things is much easier said then done. I personally love fruit's and vegetable's like eggplant, zucchini, tomatoes, cucumber's ect...I love chic pea's and lentils, radish, fennel. Pretty safe to say there is not much that I wont eat. Its too bad the same can't be said for the rest of my family...well maybe the dog......My family is totally in love with my Lentil Biscuits...yes I said lentils...they have no idea they are even in there.
Check out the simple recipe:Ingredients:
1 3/4 cup flour
1/4 cup margarine (unsalted)
dash of salt
2/3 cup milk
1 tbs baking powder
1 tbs sugar
2/3 cup Lentil puree
1. Boil 3 cups of water with 1 cup lentils, when it reaches a boil cover and let simmer for 20 - 30 min.
(for every 1 cup of cooked lentils blend with 1/4 cup water to create the puree)
2. Preheat oven to 425 F (220 C)
3. In a large bowl mix together, flour, baking powder, sugar and salt
4. Cut in margarine into mix, and add lentil puree until well mixed. Should resemble thick oatmeal.
5. Add milk, and fold until all ingredients are well mixed.
6. Place dough on a well floured surface, and pat dough out to be about 11/2 to 2 inches thick
7. Cut biscuits out with a cookie cutter.
8. Place biscuits on cookie sheet about 1 inch apart ( I like to line the sheet with parchment paper)
9. Bake for 14- 16 min or until golden
